Lamb Kofta

(Makes 14)


This dish is excellent as part of a hearty evening meal after work or school. Lamb is known to boost memory and aid concentration with its high levels of vitamin B12 and iron; it’s best to use lamb loin if you can obtain it as it has the highest concentration of these vitamins compared to other cuts. Iron aids brain health, and a deficiency of iron may also lead to poor mental performance and lack of concentration. 


750g Minced Lamb (lamb Loin preferred)

1 Onion (finely chopped)

2 Garlic cloves

¼ tsp. ground Nutmeg

¼ tsp. ground Hot Paprika

½ tsp. ground Cumin

¼ tsp. ground Cloves

½ tsp. ground Coriander

1 tsp. grated Lemon rind

12 cup fresh Parsley



(N.B. If you are using bamboo skewers on which to attach the kofta, then soak the bamboo skewers in water for several hours or overnight to prevent them from burning).

1. In a bowl, add the minced lamb, onion, garlic, spices and lemon rind and mix until all the ingredients are well combined.

2.     To this minced lamb and spice mixture, add the nuts and parsley and mix well. Cover and refrigerate for 30 minutes.

3.     Take the mixture out of the refrigerator and divide into medium sized portions with a tablespoon; on a clean surface, roll each portion into an oval shape. Thread 3 ovals onto each skewer.

4.     If using a griddle pan to cook the koftas then brush the griddle pan with some oil before placing the kofta on their skewers in the pan. (Alternatively, either grill or barbecue).

5.     Cook the kofta on their skewers in batches until brown on each side and cooked through.
