The deceptively humble outer skin of the Pomegranate fruit reveals an abundance of rich ruby jewels inside; the fresh, succulent and juicy seeds are bursting with flavour and are also crammed with nutrients. The Pomegranate is a true Super food, packed full of antioxidants and a great source of iron.
One of my all-time favourites, Pomegranates are surprisingly versatile, the seeds can be eaten just as they are with the outer skin peeled away, or the sweet, slightly tart juice extracted from them. In both Middle Eastern and Indian cooking, dried seeds, or the dried powder is used as a souring agent in sauces or within savoury recipes.
