An easy to make, simple, healthy and tasty dish that combines the superfood nutrients of salmon with the refreshingly zingy flavours of mint, tomato and citrus. Use either with lemon or orange depending upon preference. The omega-3 fatty acids and memory boosting docosahexaenoic acid (DHA) in salmon all help to keep to your child on the right food track.
1lb Salmon fillets (skin removed)
¼ cup Orange or Lemon juice
1 cup Tomatoes (chopped)
2 tbsp. Fresh Mint Leaves (finely chopped)
2 tsp. Olive Oil
A pinch of fresh, grated orange rind
Chilled Orange or Lemon slices or segments (garnish)
Place the salmon in an ovenproof glass or ceramic baking dish and pour the orange or lemon juice over the fish. Marinade for 10 minutes.
In a small bowl, add the tomatoes, mint and orange or lemon rind and mix. Set aside.
Heat oil in a large frying pan and add the marinated salmon. Cook for 4 minutes on each side; sauté until the fish is sizzling and brown on the outside whilst being totally cooked through.
Transfer the salmon onto a serving platter and top with the tomato and mint mixture; garnish with orange segments or slices.
